Tres Leches Cake

Ingredients:
• 1 ¼ cups Soy milk, unsweetened
• 2 teaspoons Apple cider vinegar
• 2 1/2 cups All-purpose flour
• 1 Tablespoon Baking powder
• 1 teaspoon Baking soda
• 1 cup Sugar
• ¼ cup avocado oil
• 2 teaspoons Vanilla extract
• 1 can of Aquafaba (liquid of a can of chickpeas)
Liquid
• 1 ½ cups Soy milk, unsweetened
• 1 ½ cups vegan condensed milk
• 1 ½ cups vegan evaporated milk
Coconut whip
•1 can coconut cream (refrigerate overnight night)
•1/4 vegan confectioner sugar
•1 tsp vanilla
Steps;
1. Make "buttermilk" combine soymilk and vinegar, and set aside.
2. Combine all dry ingredients
3. Add "buttermilk" to dry ingredients
4. Froth aquafaba (may take 15-25mintue, be patient)
5. Add oil and vanilla to dry ingredients then slowly combine froth aquafaba
6. Bake in a pan 9"x13" rectangular pan at 350° for 30 mins, allow to cool
7. While the cake bakes combine the milks
8. Once the cake cools make indentions with a fork all through the cake then pour milks
9. Let sit for few hours or refrigerate over night
10. Add whip and top with cinnamon or and favorite fruit
