Oatmeal Muffins



Who says muffins can't be healthy and delicious? These homemade oatmeal muffins prove that you can enjoy a comforting, satisfying treat without guilt and mystery ingredients. The best part? They’re quick to make, packed with wholesome goodness, and customizable. When you make them yourself, you control what goes in — no artificial junk, just real, nourishing ingredients. Bonus: they’re kiddo-approved and perfect for busy mornings or a quick snack. Healthy eating doesn’t mean giving up the foods you love — it’s about making them better, one bite at a time!


Ingredients:

  • 1/2 cup almond butter or peanut butter

  • 1 1/2 cups mashed bananas (4-5 bananas)

  • 3 cups old-fashioned oats

  • 1 1/2 cups organic soy milk

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • Pinch of pink salt

  • 1 cup raw sliced almonds, walnuts, or chocolate chips (optional)

  • 2 tbsp Power Shake or MVP Chocolate Protein Shake (for added protein and greens boost)

  • 1 extra banana, sliced (optional for topping)

Instructions:

  1. Preheat oven to 375°F and grease a muffin tin thoroughly with baking spray.

  2. If the almond butter is thick, microwave it for about 30 seconds to soften.

  3. In a large bowl, combine all ingredients and stir until well mixed.

  4. Spoon the mixture into the muffin tin, filling each cup to the top. Optionally, add a banana slice or some almonds on top.

  5. Bake for 20-25 minutes until firm. Let cool for a few minutes before removing from the tin.

  6. Enjoy warm or store in the fridge for easy grab-and-go breakfasts!
