Energy Bars

• 1 packed cup of soft dates, pitted (soaked in hot water for 15 mins)



• 2.5 cups rolled oats 



• 1/4 cup peanut butter (or almond butter or cashew butter)



• 4 1/2 tablespoons pure maple syrup



• 1 tablespoon pure vanilla extract



• 1/2 teaspoon fine sea salt



• 1 cup vegan chocolate chips, divided



1. Process oats until it becomes flour


2. Add rinse dates and rest of the ingredients and process until it becomes together and sticks. If need be Add a TBS of non dairy milk at a time. (Leave half cups of chocolate chips for topping?


3. Pour onto 9" × 5" loaf pan and press down


4. Melt chocolate. Add 1-3 Tbs of non- dairy milk. Once melted pour over. Refrigerate for 1 hr or so
