Chickpea Indian Stew


Chickpea Stew (Indian sytle)



Ingredients


Diced onion


Red pepper


Garlic


Ginger


Spices: 1 tsp cumin


1 tsp garam masala


1 tsp curry


1 tsp cinnamon


1/4 tsp turmeric


salt and pepper to taste


2 TBS tomato paste


2 cans of chickpeas, drained and rinsed


1 of coconut milk


Cauliflower


Asparagus



Instructions:


1. Sautee onions, pepper, garlic, ginger


2. Add spices and tomato paste


3. Add chickpeas, cauliflower.


Allow to simmer for 5-10 minutes


4. Combine asparagus and coconut milk


5. Simmer for another 5 minutes



Enjoy with rice, squeeze of lime, and hot sauce if you wish.
