Ingredients:
- 3 ripe bananas, mashed
- 1/3 cup avocado oil
- 1/4 cup maple syrup
- 1/4 cup plant-based milk (I used organic soy milk)
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour (or whole wheat flour)
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 scoop superfood regenerative greens powder (apple berry flavor)
- 1/2 cup chopped walnuts or chocolate chips (optional, for added texture)
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
2. In a large bowl, combine the mashed bananas, avocado oil, maple syrup, milk, and vanilla extract. Mix until smooth.
3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and greens powder.
4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid overmixing for a tender texture.
5. Fold in the walnuts or chocolate chips, if using.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
8. Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Enjoy this nutrient-packed banana bread, perfect for sharing with family or keeping for yourself as a nourishing treat!
